Creamy, thick and full of cozy spices, these Pumpkin Pie Overnight Oats are the perfect breakfast option for autumn mornings and beyond. These protein-packed oats take just minutes to assemble and are a nutritious way to start your day or have as an afternoon snack.

Ingredients
  • ½ cup whole milk or unsweetened almond milk
  • ½ cup old fashioned oats
  • 2 tbsp pumpkin puree
  • 2 tsp brown sugar or Swerve brown sugar substitute
  • ½ tsp pumpkin spice
  • ½ tsp vanilla extract
  • 1 tbs pecans, chopped
Instructions
  1. Add ingredients to a sealable container or jar. I add them in this order: milk, oats, pumpkin puree, sweetener, vanilla extract, spices and nuts.
  2. Mix well by stirring with a spoon.
  3. Seal your jar or container and place in the refrigerator overnight ( or for at least 4 hours).
  4. Enjoy these pumpkin pie overnight oats cold or warmed up with a little whipped cream, pumpkin spice, and more pecans for garnish.
