Once chilly weather rolls around, you’ll be making this easy homemade pumpkin spice latte recipe on the regular. Coffee, pumpkin puree, milk, vanilla and spices of cinnamon, ginger, nutmeg and allspice combine into a hot beverage topped with whipped cream to create everyone’s favorite drink for fall – Pumpkin Spice Latte.

The goal here is simple: you have a craving for a PSL and you want it now. You don’t want to jump in your car, weave through slow-poke traffic, sit in a drive-through line, pay for an overpriced beverage, try to enjoy sipping it as you drive back home and walk in the door with a barely warm drink with whipped cream that has deflated into a white glob that’s rapidly sinking into the depths of the pumpkin-laced liquid. Appetizing, no?

So. The only way to win in this scenario is to make it yourself, save time, gas, money and enjoy the satisfaction of playing barista at home. Also? Tip yourself by piling on extra whipped cream. You know you want to.

What You’ll Need

Milk – use dairy or dairy-free – your choice. I like to use whole milk for a richer taste.
Pumpkin Puree – make sure it’s puree and not pumpkin pie filling.
Maple Syrup or Vanilla Syrup – I’ve used both. Use whichever flavor you like best.
Vanilla Extract – for a little flavor.
Pumpkin Spice Seasoning – use your favorite brand/blend.
Hot Coffee – I use a strongly brewed coffee, but you can also use espresso shots for a more intense coffee flavor.
Whipped Cream – Use your favorite brand or homemade.

How To Make It

STEP 1: Over medium heat, whisk together milk, pumpkin puree and the maple syrup until heated through (not boiling), stirring continuously so that it doesn’t burn.
STEP 2: Remove from the heat and whisk in the vanilla extract and pumpkin spice blend until combined.
STEP 3: Add the hot hot coffee to the mixture and whisk until frothy. You can also use an immersion blender to add more froth, if desired.
STEP 4: Pour into your coffee mugs and top with whipped cream and a sprinkle of the pumpkin spice blend.
STEP 5: Take your first sip and relax into the autumn bliss known as pumpkin spice latte. Ah…

Variations

  • Milk – I love whole milk, but coconut milk, almond milk, cashew or oat milk also works. Each one gives the latte a slightly different flavor, so I suggest making this all during pumpkin season and trying the different milks to see which one(s) you prefer. Consider it your personal PSL research project. You’re welcome.
  • Sweetener – I love the maple syrup flavor, but you can also use sugar or your favorite sugar substitute, to taste
  • Coffee – I use strongly brewed coffee, but you can certainly use espresso. How you make the coffee is up to you. I’m a fan of the pour-over method, but French pressed works well for a strong brew, and even a classic drip coffee maker will do. If you have an espresso machine, you’re all set!
  • Whipped Cream – this is optional, but I’ve never met anyone who turned down a squirt of this white fluff on top of their PSL! Use the aerosol canned version for ease of delivery or you can certainly whip up a homemade batch of your own and dollop a spoonful on top.

Can I Make A Large Batch?

Sure! This recipe is easily multiplied (this recipe makes 2 servings) so just do a little math and double for 4 servings, triple for 6 servings, etc.

How Do I Make Pumpkin Pie Spice Blend?

If you don’t have pumpkin pie spice blend on hand or prefer to make your own, you need the following 4 ground spices:

  • 2 Tablespoons of ground cinnamon
  • 2 teaspoons of ground nutmeg
  • 2 teaspoons of ground ginger
  • 1 teaspoon of ground cloves

This recipe makes about 1/3 of a cup of pumpkin spice blend. Be sure and put your homemade pumpkin spice blend in a glass spice jar like this one to keep it fresh all through PSL season.

Can I Make This Into An Iced Pumpkin Spice Latte?

Sure! A super simple way is to add all the ingredients into a large mason jar, screw the lid on and shake vigorously to blend it. Pour it over a tall glass that’s filled with ice. Whipped cream on top? You decide!

Another way is to use a high speed blender filled with all the ingredients (except for ice) and blend to combine. Pour it over a tall glass that’s filled with ice and enjoy.
