Full of oats, pumpkin puree, milk, pecans, and sweetened with pure maple syrup, these overnight oats are deliciously spiced with a blend of ground cinnamon, ginger, nutmeg, allspice and cloves, also known as pumpkin pie spice blend. They taste like pumpkin pie, except in a jar!

Before digging in to enjoy these scrumptious oats, add another smattering of chopped pecans to the top for an extra helping of nuttiness and protein. And if you’re really feeling all the fall season feels, add a dollop of whipped cream or vanilla yogurt on top, too.

This recipe makes a serving for one, but it’s easily doubled or tripled if you want to meal prep for the week or if you have others in the family who also love pumpkin overnight oats!

What Are Overnight Oats?

If you love oatmeal but don’t love having to spend time standing over the stove making sure that it doesn’t bubbly over into a sticky and globby mess, then assembling the oatmeal ingredients and letting them bloom overnight in the fridge is the way to go – no stovetop needed!

The dry oats soften overnight with the liquid you use, making them deliciously edible. The best part about overnight oats is all the amazing flavors you can add that are also infused as the oats soak up the liquid and become thick and creamy. Here, I add pumpkin puree and spices, along with chopped nuts. They all work together to create a flavorful oatmeal breakfast with hardly any work on my part. Win-win!

Ingredient Notes

Whole Milk or Unsweetened Almond Milk – I love the richness of whole milk but I’ve also used almond milk with delicious results, even though it’s not a fatty liquid. Almost any liquid with some fat in it will work, including canned coconut milk. I tend to revert to whole milk, though.

Old Fashioned Oats – Avoid the quick-cooking oats if possible. I’ve also used gluten-free oats with tasty results.

Pumpkin Puree – From a can or homemade, this is the ingredient that makes these overnight oats an autumn delight!

Sweetener – Maple syrup or Swerve brown sugar substitute. I try to stay away from refined sugar, so I love a dollop of maple syrup. A great Keto sub is the Swerve brown sugar sub which has a similar texture as regular brown sugar.

Pumpkin Spice – A store bought blend is fine or use your own homemade version to add the classic pumpkin pie flavor.

Vanilla Extract – for the perfect cozy flavor that amps up everything.

Pecans – A smattering of chopped pecans in the oats as well as on the top is a crunchy garnish that adds the final taste profile of an autumn-inspired pumpkin pie.

How To Make Pumpkin Overnight Oats

  1. Add ingredients to a sealable container or jar. I like to use mason jars. I add them in this order: milk, oats, pumpkin puree, sweetener, vanilla extract, spices and nuts.
  2. Mix well by stirring with a spoon.
  3. Seal your jar or container and place in the refrigerator overnight, or for at least 4 hours.
  4. Enjoy these pumpkin pie overnight oats cold or warmed up with a little whipped cream, pumpkin spice, and more pecans for garnish.

What Type Of Oats Should I Use?

For overnight oats, old-fashioned rolled oats perform the best. Quick oats and steel-cut oats won’t give you the same texture or work as well with this method. If you need to use gluten-free oats, just make sure they’re gluten-free rolled oats, like these.

How And In What Do I Store The Oats?

I like to use mason jars because they have a tight-fitting lid and are portable. Plus, they’ll fit nicely in my refrigerator, lined on a shelf, or on the inside door pocket if I’m meal prepping more than one for the week.

Can you make them in a bowl? Absolutely! Just be sure to cover it well with a lid, if it has one, or plastic wrap.

How to Add Protein

While these pumpkin pie overnight oats are full of protein already, if you’re looking to add even more,  you can always add a scoop of your favorite protein powder to them. If you do, you may need to increase the milk.

If you’re looking for more natural protein ingredients not in powdered form, a dollop of yogurt is always a great addition.

Since this is a pumpkin-based recipe, you can always add pumpkin seeds along with the pecans.

How Long Will Overnight Oats Last In The Fridge?

Your jar or bowl of overnight oats will last up to 4 days in the fridge, making it great for meal planning your breakfasts. Repeat the process about mid-week (remember, these overnight oats take just minutes to assemble) and you’ll have a week’s worth of breakfast oats ready to enjoy.

How To Serve Overnight Oats

Cold: My go-to way to enjoy overnight oats is to eat them cold, straight from the refrigerator.

Warm: However, if I’m not pressed for time, I’ll actually dump them out into a small saucepan, add a splash more milk (not too much!) and heat them on low on the stovetop. This turns it into a cozy and leisurely breakfast that’s perfect with a cup of coffee. What could be better?
