Cilantro lovers, rejoice! Here’s a quick and versatile recipe that you will make again and again as you find new uses for it. Flavorful cilantro really shines in a base of avocado and plain yogurt. Jalapeño and a little apple cider vinegar give it a zesty kick. Salt and garlic round it out to create an addicting little sauce that will become a family favorite.


Here’s how it comes together:

Using a high-speed blender such as a Vitamix or Blendtec (here’s what I use) or a food processor, add all the ingredients except for the olive oil. Blend (or pulse) until smooth. Add the olive oil and blend again. If you would like more of a sauce consistency, add a little more olive oil. If you like it thick like a dip, leave as is.

We like to use this as a sauce for salmon and chicken. We love it as a dip for fries or crackers or chips! It will keep in the fridge for a few days, tightly covered, if you have any leftovers. Blend some up today!

Creamy Cilantro Avocado Jalapeño Sauce

Ingredients
  • 1 avocado, pitted
  • 1 -2 jalapeños, seeded (may also use jarred jalapeño slices instead of fresh)
  • 1½ cup packed cilantro leaves
  • 
1⁄2 cup plain Greek yogurt
  • 1 clove minced garlic (or ½ tsp. garlic powder)
  • 1 Tablespoon apple cider vinegar
  • 1⁄2 teaspoon sea salt
  • ¼ cup olive oil
Instructions
  1. To a high speed blender or food processor, add all ingredients except the olive oil.

  2. Blend (or pulse) ingredients until smooth.

  3. Slowly add olive oil to machine while blending on low. (If you like your sauce thinner, add a bit more olive oil.)

  4. Sauce may be stored in fridge for up to 2 days, tightly covered.

Having fresh herbs on hand is a great way to enhance your recipes and experiment with flavor combinations. Growing your own indoor herbs is not only an easy DIY project, but an economical way to keep fresh herbs available year round.

Having an indoor herb garden is perfect for you if you have limited outdoor space, or live in an apartment or condo. Plus, herbs emit a wonderful fragrance which will entice you use them in your cooking! Additionally, depending on how you choose to grow and display your indoor herbs, they can act as a decor element in your home.

Here are some different DIY indoor herb garden ideas to consider:

Design a One-Pot Herb Garden
If your kitchen space for growing herbs is limited, consider growing all your herbs in one large container rather than separate pots for each herb. You can design an aesthetically pleasing herb garden in one pot by planting small groupings of 3 or 4 different herbs in the soil of your large container, making sure to space them out so that the roots will have room to grow. Choose the herbs that you’ll use the most and create a unique herb garden in a minimalistic container, like this one. I like to use organic, non-GMO seeds like these, which have 10 varieties of herbs from which to choose.


Hang Herb Planters Above Your Kitchen Sink
Rather than using your counter space or window sill to house your DIY herb garden, consider using hanging pots. If you have a kitchen window over your sink, this is a great option, since the herbs will be exposed to direct sunlight. Plus, there are some great options for hanging planters, like this one. Plus, tiered hanging pots can serve as an interesting design element in your kitchen.

 

Create a Small Terrarium of Herb Plants
Terrariums are such a delightful design element, whether using plants or herbs. Have fun creating a unique herb garden within a beautiful terrarium like this one. Rosemary, oregano, basil, and mint would be gorgeous in a terrarium. Here are some organic non-GMO seeds that you might consider.

 

Grow Herbs in Mason Jars
If you have space for individual containers, consider growing your herbs in mason jars. Since the jars are made of glass, you can track the growth of your herbs. Using wide-mouth jars, like these, are preferable, so the herbs have room to grow and flourish. Each herb gets its own jar, which should be in front of a window that gets sunlight. Using colorful mason jars also adds a vibrant touch to your herb garden, like this all-in-one, self-watering kit complete with organic seeds.
